Ingredients:-

Chicken(boneless) - 500 gm
(1 inch pieces)
Green chilies - 4 nos
(cut into halves)
Ginger - 1 inch piece
(finely chopped)
Garlic pods - 10 nos
(finely chopped)
Reddish orange color – 1/2 tsp
Red chili powder - ½ tbsp
White vinegar - 2 tsp
Soya sauce – 1/2 tbsp
Green chili sauce – 1 tbsp
China salt(Ajinomotto) – 1tsp
White pepper - 1 tsp
Coriander leaves/Cilantro – 1 tbsp
(finely chopped)
Spring onions - 1 tbsp
(finely chopped)
Refined oil for deep frying

For Marination:-

Multi purpose flour – 1/2 tbsp
Corn flour – 1 tbsp
Egg - 1
Salt - As reqd

Method:- 

1)Marinade chicken in the mentioned marination ingredients for atleast an hour.

2)Heat oil in a deep skillet.

3)Fry the chicken pieces on medium flame, until they are golden brown and keep them aside.

4)Heat 1 tbsp of oil in a skillet.

5)Saute ginger and garlic pieces for half a minute.

6)Add the fried chicken pieces to it.

7)Add Vinegar, Soya sauce, green chili sauce and mix well.

8)Add a cup of water to it.

9)Add red chili powder, china salt, salt (if necessary), reddish orange color and cook.

10)When half of the water is evaporated, add green chilies to it and cook, till it gets dry.

11)At the end, add white pepper, coriander leaves and spring onions to it.

:- Serve hot.

That sourdough starter you have bubbling away has more uses than just for bread, you know. How about some waffles?
Remember those wonderful mornings when Mom would fire up the waffle maker, and breakfast would be waffles dripping with butter and syrup, and maybe a side of bacon or sausages? Yeah, I don’t remember that at all. My mother never owned a waffle maker. So I’m making my own waffle memories here.

The beauty of using starter for waffles is that the starter doesn’t have to be completely active to still make a nice waffle. It’s used for flavor more than anything else, so a sleepy starter from the fridge or a fiercely bubbling starter on the counter, or a new starter that’s not quite ready—they’re all just as good. After all, the baking powder in the recipe provides most of the lift.

Of course, the flavor you end up with will depend on your starter. A really mild starter will be much less assertive in the waffles than if you’ve got a seriously sour starter brewing. Either way, it’s a great use for starter, particularly if you’ve been aggressively feeding, your jar is threatening to overflow, and it’s not a convenient day for breadmaking.

Ingredients:-

• 5 ounces (1 cup) (140 grams) all purpose flour

• 1 1/2 (20,5 grams) teaspoons baking powder

• 2 (27 grams) tablespoons sugar

• 1 (13,5 grams) teaspoon salt

• 2 eggs

• 1/2 cup (120 ml) milk

• 8 ounces (226 g) (by weight) sourdough starter

• 3 tablespoons (39 g) butter, melted

Method:-

1. In medium bowl, combine flour, baking powder, sugar, and salt. Whisk until well combined.

2. In separate medium bowl, whisk eggs and milk until combined. Add sourdough starter and whisk until completely blended. Add flour mixture and butter and stir until combined. 
Depending on thickness of starter, you might need to adjust batter. It should be the consistency of pancake batter. Add flour or milk as needed to reach that consistency.

3. Cook in waffle iron according to manufacturer’s directions.

Home Made Kachori Bhujia Recipes / How to Make Kachori Bhujia


Kachori Bhujia is a traditional recipe of Bihar, salted crispy puris made with wheat flour and hot potato flavored potato bhujia made with small potatoes can be prepared for a special holiday.


Ingredients:-

- For Kachori -
 
• Wheat Flour - 2 cup (250 grams)

• Semolina - 1/2 cup (80 grams)

• Kalonji - 1/2 tsp

• Carom seeds - 1/2 tsp 

• Salt - more than 1/2 tsp or as per taste

• Mustard oil - for frying kachoris and kneading dough

- For Aloo Bhujiya-

• Potato - 500 grams (small size)

• Green coriander - 4-5 tbsp (finely chopped)

• Mango powder - 1/2 tsp

• Salt - 1 tsp or as per taste

• Mustard oil - 4-5 tbsp

• Red chilly powder - 1/4 tsp

• Turmeric powder - 1/4 tsp

• Asafoetida - 1 pinch

• Cumin seeds - 1.5 tsp

• Ginger - 1 inch piece

• Black pepper - 20-25

• Green coriander - 1 tsp

• Mustard oil - for frying kachori


Method:-

• Take wheat flour in a big bowl. Add semolina, carom seeds, kalonji, salt and 4 tsp oil into it and mix well. 

• With help of lukewarm, knead stiff and tight dough, same as required for making pooris.

• Cover the dough and keep it aside for 20 minutes to set. Meanwhile prepare aloo bhujiya. 

• Wash potatoes thoroughly and dry. Now chop them in 2 to 4 pieces without peeling. Preheat oil in a pan.

• When oil is sufficiently hot, add 1/2 tsp cumin seeds and asafoetida into it. After sauteing cumin seeds, add turmeric powder., coriander powder, chopped potatoes, salt, red chilly powder and finely chopped green chilly. 

• Mix everything really well. Saute for 2 to 3 minutes. 

• When potatoes are nicely coated with spices, add 2 to 3 tbsp water into it, cover and cook for 5 minutes on low flame.

• Check later. Cook until potatoes get soft and tender. Check at regular intervals. If required, add more water. 

Meanwhile grind masala for the sabzi. Add rest of the cumin seeds, black pepper, ginger and 1 to 2 tsp water in a mixture jar and make a paste. 

• Check potatoes now. When cooked add mango powder, green coriander and grounded masala into the pan. Cook for 2 to 3 minutes on high flame. 

• Mix everything really well. Aloo bhujiya is now ready. Turn off the flame and take our bhujiya in a bowl. 

• Dough is also ready. Grease hands with some oil and knead the dough again. 

• Make 18 to 20 lumps from dough (equal to the size of small lemon). Roll the lump, giving it an oval shape.

• Take one dough ball, place it over the rolling board and with help of rolling pin, roll it out in a poori with 3 to 3.5 inch diameter. 

• Preheat oil in a wok. When oil is medium hot, place rolled pooris into it and fry it on medium flame until it gets golden brown in color. 

• Take out fried kachoris in a plate with absorbent paper. Likewise fry all kachoris. 

• Piping hot and delicious kachori bhujiya is ready. Serve roasted tomato chutney with kachori bhujia.

Ingredients:-

Mutton - 1 kg
Basmati rice - 1 kg
Ginger(paste) - 3 tsp
Garlic(paste) - 3 tsp
Curd - 1/2 cup
Saffron powder - 1/2 tsp
Coriander leaves and mint leaves(finely chopped) - 1 1/2 cups
Green chillies - 6 nos
Oil - 3 tbsp
Garam masala powder - 3 tbsp
Bay leaves(Karuga/Vazhana ela) - 2 nos
Cardamom(Elakka) - 3 nos
Cloves(Grambu) - 4 nos
Cinnamon(Karugapatta) - 3 pieces
Onion - 4 - 5 nos
(thinly sliced)
Sai jeera - 1 tsp (optional)
Ghee - 1 tsp
Colour - 2 pinch
Salt - As required

Method:-

1)Wash the meat pieces very well.

2)Squeeze out all the water very well.

3)Mix together 1½ tsp of ginger and garlic paste each, 1/2 cup curd, salt, yellow powder, 1/2 cup of coriander and mint leaves and green chillies without removing the top stalk.

4)Mix thoroughly well the above mixture with the mutton.

5)Keep in the refrigerator over night or for at least 2 – 3 hrs.

6)Heat oil in a vessel.

7)Add sai jeera.

8)Add onion and saute, till they turn brown.

9)Add ½ spoon of ginger and garlic paste each and fry well.

10)Add garam masala powder and fry well.

11)Add ½ cup of mint and coriander leaves and fry well.

12)Add the marinated mutton and stir well.

13)Add salt.

14)Cover and cook on a low fire, till the mutton is cooked. Stir occasionally.

15)When the mutton is being cooked, heat up another big vessel.

16)Add water, bay leaves, cardamom, cinnamon sticks and cloves and allow it to boil.

17)Add rice, salt and another ½ cup of mint and coriander leaves.

18)Cook, till half done and strain the rice.

:- Remember not to overcook the rice.
:- Use a big vessel so that the rice does not stick with one other.
:- Cook, till half done as the rice will get cooked in steam later.

19)Once the mutton is cooked, there should not be more water in the mutton. If there is more water, then keep the flame high and open the lid and stir.

:- In short, there should be thick gravy with the mutton.

20)Add the cooked rice into the mutton gravy.

21)Add 2 tsp of ghee/oil on the rice (optional).

22)Mix together 2 spoons of water and red/yellow colour and pour this liquid in the center of the rice.

23)Cover and keep on low fire for 15 mins.

24)Open and check whether steam is coming out. If yes, cover it again.

25)Open it and before serving, mix half quantity very well so that each rice is coated with the mutton masala.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
1 cup caster sugar
1 cup soft brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups dark chocolate, broken into small pieces

Method:-

1. In a large bowl combine the flour, baking soda and salt.

2. In a separate bowl, mix the butter, caster sugar, brown sugar and vanilla extract until smooth. 

3. Add the eggs and the flour to the mixture and beat to combine. 

4. Add the chocolate pieces and stir.

5. Drop well rounded spoonfuls of dough onto a greased cookie sheet. 

6. Bake at 375F for 8-10 minutes.

7. Remove from the oven and place cookies on a wire rack to cool.
